Ingredients
  

Main Ingredients

  • 1 lb smoked sausage turkey, chicken, or pork
  • 5 cups fresh broccoli florets
  • 2 medium apples Honeycrisp or Gala preferred, sliced
  • 1 small red onion peeled and chunked
  • 3-4 tbsp olive oil use what’s available

Seasonings

  • 1 tsp garlic powder
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp dried thyme can substitute with fresh

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Line a sheet pan with parchment paper or lightly oil it.
  • In a large bowl, toss broccoli, apples, onion, and sausage with olive oil and seasonings until evenly coated.
  • Spread the mixture onto the prepared sheet pan in a single layer.

Cooking

  • Roast in the preheated oven for 25 minutes, stirring halfway through to ensure even cooking.
  • Check doneness: sausage should be crispy, broccoli should be tender with some dark spots, and apples should be fork-tender.

Notes

For make-ahead prep, chop the ingredients and store them separately in the refrigerator. Leftovers can be stored in airtight containers for up to 3 days.
