  • 4 large large potatoes Yukon Gold or Russett potatoes work best.
  • 6 slices crispy bacon, chopped Can use pre-cooked bacon bits for convenience.
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 pieces green onions, chopped
  • to taste Salt and pepper

Preparation

  • Boil the potatoes until tender. Let them cool, then peel and cut into cubes.
  • In a bowl, mix the sour cream, mayonnaise, Dijon mustard, salt, and pepper until well combined.

Mixing

  • In a large salad bowl, combine the potato cubes, chopped bacon, shredded cheddar cheese, and green onions.
  • Pour the dressing over the mixture and gently toss to combine everything evenly.

Chilling

  • Chill for at least 1 hour before serving. Enjoy cold!

Notes
