Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • Salt and pepper to taste Salt and pepper to taste

Wet Ingredients

  • 2 large eggs
  • 1 cup milk

Main Ingredients

  • 1 cup cooked sausage, crumbled Any cooked sausage (pork, turkey, or chicken) is suitable.
  • 1 cup shredded cheese Cheddar or any cheese of your choice.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin with butter or cooking spray.
  • In a large bowl, mix together the flour, baking powder, salt, and pepper until well combined.
  • In another bowl, whisk together the eggs and milk until smooth and frothy.
  • Add the crumbled sausage and shredded cheese to the dry ingredients and mix well.
  • Pour in the egg mixture and stir gently until just combined.
  • Fill each muffin tin about 2/3 full with the batter.

Baking

  • Bake for 20-25 minutes or until the tops are golden brown.
  • Allow to cool slightly before removing from the tin.

Notes

Allow the muffins to cool completely before storing in an airtight container. For later snacks, wrap individually in plastic wrap. Can be reheated in the microwave for 10-15 seconds.
