  • 2 tablespoons of olive oil For sautéing the onions.
  • 1 large onion, chopped To build the base flavor.
  • 2 medium potatoes, diced Adds body and creaminess.
  • 1 teaspoon of thyme For flavor.
  • to taste Salt and pepper Season according to your preference.
  • as needed Fresh parsley for garnish Brightens the soup when served.

Preparation

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  • Add the peeled garlic cloves and cook for 1-2 minutes until fragrant and slightly softened.
  • Stir in the diced potatoes, broth, and thyme. Bring to a boil, then reduce heat and let simmer for 30 minutes.

Blending

  • Use an immersion blender to puree the soup until smooth.
  • If you prefer texture, blend only half and leave the rest chunky.

Finishing

  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

Store leftovers in airtight containers for up to four days or freeze for three months. To reheat, thaw overnight and warm gently.
