  • 1 whole 3-4 pound whole chicken
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 whole lemon, quartered
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme

Preparation

  • Preheat your rotisserie oven to 400°F (200°C).
  • Pat the chicken dry with paper towels.
  • In a small bowl, mix olive oil, salt, black pepper, paprika, garlic powder, and onion powder.
  • Rub this mix over the chicken, including under the breast skin.
  • Stuff the cavity with quartered lemon, rosemary, and thyme.

Cooking

  • Place the chicken on the rotisserie rod, making sure it’s balanced.
  • Secure it with the clamps.
  • Cook for about 75 to 90 minutes, or until a meat thermometer reads 165°F (74°C) in the thickest part of the thigh.

Serving

  • Once cooked, take the chicken off the rotisserie.
  • Let it rest for 10-15 minutes before carving.
  • Carve your chicken and enjoy!

Notes

Store leftover rotisserie chicken in the fridge for up to 4 days or in the freezer for up to 3 months. To reheat, use an air fryer or the oven to keep the skin crispy. Just a few minutes at a high temperature will do the trick. Alternatives include using pre-chopped veggies for sides, buying a store-bought rotisserie chicken if short on time, and using bagged salad mixes to save on prep.
