  • 2 pounds carrots, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the carrot sticks with olive oil, minced garlic, salt, and pepper until evenly coated.
  • Spread the carrot sticks in a single layer on a baking sheet.

Cooking

  • Roast the carrots in the preheated oven for about 25 to 30 minutes, stirring halfway through.
  • Once tender with slightly caramelized edges, remove from the oven and sprinkle Parmesan cheese over the carrots.
  • Return the baking sheet to the oven for an additional 5 minutes to melt the cheese.
  • Garnish with fresh parsley, if desired, and serve warm.

Notes

For a sweeter touch, drizzle a bit of honey over the carrots before roasting. To make it vegan, use nutritional yeast instead of Parmesan cheese.
