  • 1 tablespoon Olive oil or butter For toasting the rice.
  • 1 medium Onion, diced Provides flavor as an aromatic.
  • 2 cloves Garlic, minced Adds depth of flavor.
  • 1/2 cup Parmesan cheese, grated For richness and flavor.
  • 1 tablespoon Butter Adds creaminess at the end.

Optional Ingredients

  • 1 cup Mushrooms, sliced For an earthy flavor.
  • 1 cup Spinach, chopped For added greens.
  • 1 cup Shrimp or chicken, cooked Protein additions for a heartier dish.
  • 1 pinch Saffron For a traditional touch in Risotto alla Milanese.
  • 1/2 cup White wine Adds acidity and depth.

Instructions
 

Preparation

  • Heat the olive oil or butter in a heavy-bottomed saucepan.
  • Add the diced onion and minced garlic; sauté until soft and translucent.
  • Add the Arborio rice to the pan, stirring it to coat with the oil or butter.
  • Toast the rice for about 2-3 minutes until the edges look clear.

Cooking

  • Gradually add the warm broth one ladle at a time, stirring continuously until absorbed.
  • Continue adding broth and stirring until the rice is creamy and al dente, about 18-20 minutes.
  • If using, stir in the optional ingredients like mushrooms and shrimp with the last ladle of broth.

Finishing Touches

  • Remove from heat and stir in Parmesan cheese and butter for added creaminess.
  • Let the risotto sit for a couple of minutes before serving.

Notes

Always use warm broth to ensure the rice cooks evenly. Adjust the consistency by controlling the amount of broth used. Risotto should flow slightly when plated.
