  • 2 lbs rhubarb Fresh, vibrant rhubarb, cleaned and trimmed yields about 1 1/4 lbs.
  • 1.5 cups sugar Real sugar is preferred for better flavor.
  • 1 liter vodka Cheap vodka is acceptable.

Preparation

  • Chop the rhubarb into small pieces and place them in a large, sealable jar.
  • Add the sugar to the jar and shake well to mix the ingredients.
  • Pour the vodka over the rhubarb and sugar mixture, ensuring everything is well combined.
  • Close the lid tightly and place the jar in a cool, dark location.
  • Let the mixture steep for 3 to 4 weeks, or up to 6 months for a deeper flavor, shaking the jar occasionally.
  • After steeping, strain the schnapps into a pitcher to remove any solids.
  • Finally, pour the schnapps into bottles for serving.

Notes

Store the schnapps in a cool, dark place. It can be enjoyed for several months. Consider bottling in smaller portions for gifting.
