Ingredients
  

Main Ingredients

  • 6 stalks rhubarb Fresh and vibrant
  • 1 cup raw honey Adjust the sweetness as desired
  • 1-2 tablespoons culture (sauerkraut juice or whey) For fermentation
  • 1 each demijohn For fermentation
  • 1 each airlock To allow gases to escape
  • 1 each funnel For pouring liquid
  • several each swing-top bottles For storing the finished soda

Instructions
 

Preparation

  • Thoroughly wash the rhubarb stalks under cold water.
  • Chop the rhubarb into small pieces, about an inch long.
  • In a pot, combine the chopped rhubarb with enough water to cover the stalks completely.
  • Bring the mixture to a gentle simmer, stirring occasionally for 15-20 minutes until the rhubarb is soft.
  • Remove the pot from heat and let it cool slightly before straining the liquid.
  • Sweeten the rhubarb juice with raw honey and stir until dissolved.
  • Add your culture (sauerkraut juice or whey) and mix gently.

Fermentation

  • Pour the mixture into the demijohn using the funnel.
  • Attach the airlock and place in a warm, dark spot.
  • Let it ferment for about 3 to 7 days, watching for the formation of bubbles.

Storage

  • Carefully siphon the liquid into swing-top bottles and store in the refrigerator.
  • Leave a bit of space at the top of each bottle to allow for fizz.

Notes

This soda is excellent when served chilled with ice on warm days. Adjust sweetness by varying honey levels. Safe for kids due to low alcohol content.
