Ingredients
  

For the crust

  • 1.5 cups all-purpose flour For the base crust

  • 0.25 teaspoons salt

For the filling

  • 2 cups rhubarb, chopped Fresh rhubarb gives a lively tang
  • 1 cups sugar
  • 0.25 cups cornstarch Thickens the custard
  • 0.25 teaspoons baking powder
  • 1 cups milk
  • 1 teaspoons vanilla extract For added flavor
  • 1 count egg

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  • In a mixing bowl, combine the flour, butter, sugar, and salt.
  • Use your hands or a pastry cutter to form a crumbly mixture that holds together when pressed.
  • Press this mixture firmly into the bottom of the prepared pan.
  • Bake for 15 minutes or until lightly golden.

Filling

  • In another bowl, mix together the rhubarb, sugar, cornstarch, baking powder, milk, and vanilla until well combined.
  • Pour the rhubarb mixture over the baked crust, spreading it evenly.
  • Bake for an additional 40-45 minutes, or until the custard is set and lightly golden.
  • Let the bars cool in the pan before cutting them into squares.

Notes

Serve with whipped cream or vanilla ice cream for a luxurious touch. Store in an airtight container in the fridge for up to a week.
