Crust Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened Use real butter for better flavor.

Filling Ingredients

  • 2 cups rhubarb, chopped Ensure rhubarb is fresh for the best tartness.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a mixing bowl, combine 1 1/2 cups flour and powdered sugar, then cut in the butter until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of the prepared baking dish to form a crust.
  • Bake the crust for 10-12 minutes or until lightly golden. Remove from oven and let cool slightly.

Filling

  • In another bowl, combine rhubarb, granulated sugar, eggs, milk, 1/3 cup flour, vanilla extract, and baking powder. Mix well until smooth.
  • Pour the rhubarb mixture over the pre-baked crust and spread evenly.

Baking

  • Bake in the oven for 30-35 minutes, or until the custard is set and slightly golden.
  • Allow to cool before cutting into bars. Serve and enjoy!

Notes

For serving, consider adding a scoop of vanilla ice cream or a dollop of whipped cream for contrast. Store in an airtight container; they can last 4-5 days in the refrigerator or up to three months in the freezer.
