Ingredients
  

For the Crust

  • 1 cup all-purpose flour All-purpose flour for the base.
  • 1 cup rolled oats Adds texture to the crust.
  • 1/2 cup brown sugar For sweetness in the crust.

For the Rhubarb Filling

  • 2 cups chopped rhubarb Fresh rhubarb for a tangy flavor.
  • 1 cup granulated sugar For the sweetness of the filling.
  • 2 tablespoons cornstarch To thicken the filling.
  • 1 teaspoon vanilla extract Adds depth to the filling.

For the Cream Cheese Topping

  • 8 ounces cream cheese Make sure it's softened.
  • 1 cup powdered sugar For sweetness in the topping.
  • 1 teaspoon vanilla extract Enhances the topping flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F and prepare a 9×13 baking dish by greasing it lightly.
  • In a mixing bowl, combine flour, oats, brown sugar, and melted butter. Mix until crumbly.
  • Press this mixture firmly into the bottom of the prepared baking dish. Bake for 15 minutes, until lightly golden.

Making the Filling

  • While the crust is baking, prepare the rhubarb filling. In a saucepan, combine chopped rhubarb, granulated sugar, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens, about 10 minutes.
  • Remove from heat, stir in the vanilla extract, and set aside.

Assembly

  • Once the crust is baked, spread the thick rhubarb mixture evenly over it. Bake for another 10 to 15 minutes, until bubbly in the center.
  • In a mixing bowl, beat the cream cheese, powdered sugar, and a splash of vanilla extract until smooth and glossy.
  • After the bars have cooled completely, carefully spread the cream cheese mixture over the rhubarb filling. Chill in the refrigerator for at least 2 hours to set.
  • Once chilled, cut into squares and serve.

Notes

Serve with coffee or ice cream for a delightful treat. Store in the refrigerator for up to a week.
