Ingredients
  

For the crust

  • 1 and 2/3 cups graham cracker crumbs
  • 1/2 cup butter, melted (1 stick)
  • 2 tablespoons sugar

For the filling

  • 3 cups sweetened, flaked coconut
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup seedless raspberry preserves (or your preferred flavor)
  • 1/2 cup chopped pecans
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup white baking chips
  • 1 teaspoon shortening

Instructions
 

Prepare the Crust

  • Crush 15 ounces of shortbread cookies and blend them with melted butter until sandy.
  • Press the mixture firmly into the bottom of a lined baking pan covering it evenly.

Add the Raspberry Jam

  • Spread the seedless raspberry jam over the crust using a spatula to reach all edges.

Prepare the Coconut Mixture

  • In a bowl, combine the sweetened condensed milk with the flaked coconut and pour evenly over the jam.

Add Nuts and Chocolate

  • Sprinkle chopped pecans on top, pressing gently into the mixture.
  • Scatter semisweet chocolate chips and white chocolate chips across the surface, reserving some white chips for later.

Bake the Bars

  • Preheat your oven to 350°F (175°C).
  • Bake for 25-30 minutes until golden and aromatic.

Cool and Set

  • Let the bars cool in the pan to set flavors and texture.

Notes

Store in the fridge for up to a week or freeze for up to three months. Reheat in the oven or air fryer for crispiness. For shortcuts, use pre-mixed cookie dough and frozen fruit.
