Main Ingredients

  • 1 lb ground turkey Can substitute with ground chicken or beef.
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced Do not skip for flavor.
  • 2 medium sweet potatoes, peeled and cut small Regular potatoes or zucchini can be used as alternatives.
  • 1 medium red bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 2 cups baby spinach
  • 1/2 cup shredded cheddar

Cooking Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and cook for 2 minutes, then add the garlic and ground turkey. Break up the turkey and cook until no longer pink.
  • Stir in the sweet potatoes, bell pepper, paprika, Italian seasoning, salt, and pepper.
  • Pour in the chicken broth, cover, and cook for 10 to 12 minutes, stirring once or twice, until the sweet potatoes are tender.
  • Fold in the spinach and cook until wilted.
  • Sprinkle cheddar over the top, cover for 1 minute to melt, and serve warm.

Notes

Store leftovers in airtight containers. Good for up to three days in the fridge or frozen for longer storage. Reheat in the microwave or oven.
