Ingredients
  

For the filling

  • 2 cups diced peaches Fresh or canned (drained well)
  • 1 tbsp sugar For sweetness
  • 1 tsp lemon juice To enhance flavor

For the crumb mixture

  • 1 1/2 cups flour All-purpose or whole wheat
  • 3/4 cup rolled oats For texture
  • 3/4 cup brown sugar Brown for flavor
  • 1/2 tsp cinnamon Can substitute with nutmeg
  • 1/2 cup melted butter For richness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  • Toss the diced peaches with sugar and lemon juice in a mixing bowl. Let them sit for a few minutes to release their juices.
  • In a separate bowl, mix together the flour, rolled oats, brown sugar, cinnamon, and melted butter. Stir until you have a crumbly mixture.
  • Press half of the crumb mixture evenly into the bottom of the prepared pan.
  • Spread the peach mixture over the crust, making sure it’s evenly distributed.
  • Sprinkle the remaining crumb mixture over the top of the peach layer.

Baking

  • Bake for 35 to 40 minutes until the top is golden and the peaches are bubbling.
  • Once it’s out of the oven, allow it to cool for about 10 to 15 minutes before slicing.

Notes

Serve warm with vanilla ice cream or whipped cream. Leftovers can be stored in the refrigerator for up to a week or frozen for up to three months. Reheat in the oven for best texture.
