  • 4 cups corn kernels Use fresh, frozen, or canned corn.
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese Feta can be used as a substitute.
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 2 tbsp chopped cilantro Fresh herbs enhance the flavor.
  • 1 jalapeno, minced Adjust amount for spice level.

Cooking

  • Heat a skillet or grill over medium-high heat and add the corn kernels, spreading them evenly.
  • Char the corn until lightly browned, stirring occasionally for about 5-7 minutes.
  • In another bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, and cumin until smooth.
  • Add the charred corn to the dressing and toss gently to coat.
  • Fold in cotija, cilantro, and jalapeno and mix until combined.
  • Chill the salad until ready to serve or serve slightly warm. Add extra chili powder or lime juice before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Not recommended for freezing. Can be served with tacos or grilled meats.
