Ingredients
  

For the Chicken Salad

  • 2 cups canned chicken or cooked chopped chicken You can also use leftover roasted chicken.
  • 2 tbsp mayonnaise
  • 1 tbsp Greek yogurt Can be swapped for sour cream.
  • 1 tsp Dijon mustard
  • 1 stalk celery, finely chopped
  • 2 tbsp sweet pickle relish
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For Assembly

  • 4 large tortillas
  • 4 leaves lettuce

Instructions
 

Preparation

  • In a mixing bowl, combine the chicken, mayonnaise, yogurt, mustard, celery, relish, salt, and pepper. Mix until smooth.
  • Lay out the tortillas on a clean surface.
  • Place a lettuce leaf on each tortilla.
  • Divide the chicken salad evenly among the tortillas.
  • Roll the tortillas tightly into wraps.
  • If you want easier grab-and-go portions, slice them in half.
  • Keep chilled until you’re ready to leave home. If it’s warm outside, pack with an ice pack.

Notes

For best results, only add the salad to the tortillas right before serving to prevent sogginess. Leftover chicken salad can be stored in an airtight container for 3 to 4 days.
