Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 yellow onion chopped
  • 1 clove garlic minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 15 ounces black beans rinsed and drained
  • salt and pepper to taste
  • 6 corn tostadas or flour
  • 1/2 cup Monterey Jack cheese shredded
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 5 minutes until softened.
  • Stir in garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  • Add black beans and mash slightly with a potato masher or fork, leaving some whole. Season with salt and pepper. Cook for 5–7 minutes, stirring occasionally.
  • Warm tostadas in a dry skillet or oven according to package directions.
  • Spread black bean mixture on each tostada and top with shredded cheese. Broil for 1–2 minutes until cheese is melted and bubbly.
  • Garnish with chopped cilantro and any desired toppings such as sour cream, salsa, or avocado. Serve immediately.
