Ingredients
  

For the peach filling

  • 4 cups sliced peaches Fresh or canned peaches work; drain canned ones well.
  • 1/3 cup sugar
  • 1 tbsp chopped fresh basil Can substitute with mint or other herbs.
  • 1 tsp lemon juice

For the cobbler batter

  • 1 cup flour All-purpose flour; can substitute with almond or oat flour.
  • 1/2 cup sugar Remaining sugar for the batter.
  • 1 tsp baking powder
  • 1/2 cup milk Can use dairy or non-dairy alternatives.
  • 1/4 cup melted butter

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • In a large bowl, toss the sliced peaches with 1/3 cup sugar, basil, and lemon juice until well coated.
  • Spread the peach mixture evenly into the greased baking dish.
  • In another bowl, whisk together the flour, remaining 1/2 cup sugar, and baking powder.
  • Pour in the milk and melted butter, mixing until combined and smooth.
  • Spoon the batter over the peach mixture, covering as much fruit as possible.

Baking

  • Bake in the preheated oven for 35 to 40 minutes until the top is golden brown and the fruit is bubbling.
  • Let it cool slightly before serving to allow flavors to settle.

Notes

Serve fresh out of the oven or with vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
