  • 8 oz feta cheese, drained from brine
  • 1/4 cup plain Greek yogurt for added creaminess
  • 1 cup canned pumpkin puree (unsweetened) the star of the show
  • 1-2 Tbsp honey adjust to your liking for sweetness
  • 1 tsp dried thyme or use 2 tsp fresh thyme
  • to taste black pepper, freshly cracked
  • to taste fresh thyme, for garnish
  • 1/2 cup chopped walnuts optional, for added crunch
  • 1 slice crusty, toasted bread like sourdough or baguette for dipping

Instructions
 

Preparation

  • Start by adding the feta cheese and plain Greek yogurt to a food processor. Blend until smooth, scraping the sides with a spatula as needed.
  • Add the pumpkin puree, 1 or 2 tablespoons of honey, dried thyme, and black pepper to the food processor. Blend again until everything is perfectly combined.
  • Transfer the mixture to a mixing bowl, cover, and let it chill in the fridge for 30 to 60 minutes.

Serving

  • Once chilled, transfer the dip to a serving bowl. Garnish with chopped walnuts, fresh thyme, a drizzle of honey, and more black pepper.
  • Serve with crusty bread or crackers and enjoy!

Notes

Store any leftovers in an airtight container in the fridge for 3 to 5 days. Stir before serving again to refresh the flavor.
