  • 1 can 15 oz can pumpkin puree Not pumpkin pie mix
  • 1 can 12 oz can evaporated milk
  • 3 pieces eggs
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1 box spice cake mix
  • 2 sticks butter, melted
  • to taste optional Whipped cream for topping Optional, but highly recommended

Instructions
 

Preparation

  • Preheat your oven to 350°F and grease a 9x13 baking dish.
  • In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, sugar, and cinnamon until smooth.
  • Pour the pumpkin mixture into the greased baking dish.
  • Evenly sprinkle the dry cake mix over the top of the pumpkin mixture.
  • Slowly drizzle the melted butter over the cake mix.
  • Bake for about 55-60 minutes until golden brown.
  • Allow to cool for at least an hour before refrigerating.
  • Serve with whipped cream if desired.

Notes

For a special touch, sprinkle cinnamon or drizzle caramel on top before serving. Store leftovers in an airtight container in the fridge. To reheat, microwave for a few seconds.
