Cupcake Ingredients

  • 170 g all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp pumpkin spice Can make your own using cinnamon, nutmeg, and other spices.
  • 225 g dark brown sugar
  • 280 g pumpkin purée Room temperature; can make homemade.
  • 75 g vegetable oil Room temperature.
  • 2 eggs Room temperature.
  • 1 tsp vanilla extract

Frosting Ingredients

  • 200 g butter
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese
  • 345 g powdered sugar Sifted.
  • 1/2 tsp vanilla extract

Instructions
 

Make the Cupcake Batter

  • Preheat your oven to 180°C (350°F).
  • In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin spice.
  • In a larger bowl, mix the dark brown sugar and pumpkin purée until smooth.
  • Add the vegetable oil, eggs, and vanilla extract to the pumpkin mixture and mix gently.
  • Slowly add the dry mix to the wet pumpkin mixture, stirring gently until just combined.
  • Line your cupcake tray with liners and fill each liner about 2/3 full with the batter.
  • Bake for about 20-25 minutes or until a toothpick comes out clean.
  • Let cupcakes cool in the tray for a few minutes, then move them to a wire rack until completely cool.

Make the Brown Sugar Cream Cheese Frosting

  • Mix the butter and cream cheese in a large bowl until light and fluffy.
  • Add dark brown sugar and vanilla extract, beating until well combined.
  • Gradually add the sifted powdered sugar until the frosting is smooth and creamy.
  • Once cupcakes are cool, frost them with the brown sugar cream cheese frosting.

Notes

Serve these cupcakes with a sprinkle of pumpkin spice or a slice of candied pumpkin. Pair with a warm drink for a delightful experience. Store leftovers in an airtight container in the refrigerator for 3-4 days.
