  • 12-15 pieces frozen potstickers You can use store-bought or make your own.
  • 4 cups chicken broth or vegetable broth Both work beautifully.
  • 1 tablespoon soy sauce For that savory kick.
  • 1 tablespoon sesame oil Adds a wonderful nutty flavor.
  • 2 teaspoons grated ginger For warmth.
  • 2 cloves garlic, minced You can never have too much garlic.
  • 2-3 pieces green onions, chopped For a fresh crunch.
  • 1/2 cup sliced mushrooms Optional, adds earthiness.
  • 1/2 cup spinach or bok choy Optional, bring in some greens.
  • 1 tablespoon rice vinegar Optional for brightness.
  • to taste Salt and pepper Season to your liking.
  • 1 teaspoon chili oil or red pepper flakes Optional, if you like a little heat.

Preparation

  • In a large pot, heat the sesame oil over medium heat. Once hot, add the minced garlic and grated ginger. Sauté them for about 30 seconds until fragrant.
  • Pour in the chicken or vegetable broth and bring it to a gentle simmer.
  • Add the frozen potstickers to the simmering broth and cook according to package instructions, usually about 5-7 minutes.
  • If using mushrooms, spinach, or bok choy, add them in during the last 2-3 minutes of cooking.
  • Stir in the soy sauce and rice vinegar (if using). Season with salt and pepper to taste and let the flavors meld.
  • Ladle the soup into warm bowls, garnish with the chopped green onions, and drizzle with chili oil or sprinkle red pepper flakes if desired.

Notes

Serve as a main course for a cozy family dinner. Consider serving with spring rolls and optional toppings like chili oil or soy sauce. Leftovers can be stored in an airtight container for up to three days.
