  • 1 pound pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium bell pepper, diced
  • 1 cup mozzarella balls
  • 1/2 cup olives, sliced
  • 1/2 cup Italian dressing
  • to taste Salt and pepper

Preparation

  • Cook the pasta according to package instructions; drain and let cool.
  • In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, mozzarella balls, and olives.
  • Pour Italian dressing over the mixture and toss to coat.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

Leftover pasta salad can be stored in an airtight container in the fridge for up to three days. Toss it again before serving to refresh.
