Plum Crumble Bars with Oats

Part pie, part cookie, all delicious. These buttery plum crumble bars are easy to make, loaded with juicy fruit, and topped with a golden oat crunch. The perfect lazy baker's treat.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup rolled oats not instant
  • ¾ cup brown sugar
  • ½ teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 4–5 ripe plums sliced, about 2 cups
  • 2 tablespoons lemon juice
  • ¼ cup granulated sugar for the fruit layer
  • 1 teaspoon cinnamon optional

Instructions
 

  • Grease an 8x8-inch baking pan or line it with parchment paper. Preheat oven to 350°F (175°C).
  • In a bowl, mix flour, oats, brown sugar, and salt. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse sand.
  • Press two-thirds of the crumble mix into the pan to form the crust.
  • Toss sliced plums with lemon juice, granulated sugar, and cinnamon. Spread evenly over the crust.
  • Sprinkle remaining crumble mix over the top without packing it down.
  • Bake for 40–45 minutes until golden and bubbling. Let cool completely before slicing.

Notes

Store at room temperature in an airtight container for 2–3 days or refrigerate up to 5 days. Freeze individually wrapped bars for up to 3 months. Let bars come to room temperature before eating for best texture.
