  • 1 lb Italian sausage (sweet or spicy) Choose your preferred flavor
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream For a creamy texture
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese For garnish
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Cooking Steps

  • Heat olive oil in a large pot over medium heat until it shimmers.
  • Add Italian sausage, breaking it up as it cooks until browned. Remove the sausage and set aside, leaving drippings in the pot.
  • Sauté diced onion and minced garlic in the pot for about 3–4 minutes until soft and fragrant.
  • Stir in drained diced tomatoes, chicken stock, dried basil, and oregano. Bring to a gentle simmer for about 10 minutes.
  • Add ditalini pasta and cook until al dente, about 8–10 minutes.
  • Reduce heat and stir in heavy cream and grated Parmesan until melted and creamy.
  • Season with salt and pepper to taste, adjusting flavors as needed.
  • Garnish with fresh parsley before serving hot.

Notes

For variations, use ground turkey instead of sausage, add spinach or kale, or swap ditalini for other pasta shapes. Leftovers can be refrigerated for 3–4 days.
