Parmesan Cabbage Fritters with Garlic Dip

Crispy on the outside, tender on the inside, these cheesy cabbage fritters are the ultimate underdog snack. Paired with a creamy, tangy garlic dip, they're addictively delicious and surprisingly easy to make.

Ingredients
  

  • 1 small head of cabbage, finely shredded about 4 cups
  • ½ cup grated parmesan cheese use freshly grated, not pre-packaged
  • 2 eggs, beaten
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon salt for fritters
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for frying
  • ½ cup Greek yogurt or sour cream for dip
  • 1 clove garlic, minced for dip
  • 1 tablespoon lemon juice for dip
  • ½ teaspoon salt for dip
  • 1 tablespoon chopped fresh dill optional, for dip

Instructions
 

  • Finely shred the cabbage and toss with salt. Let sit for 10 minutes, then squeeze out as much liquid as possible.
  • In a large bowl, combine shredded cabbage, parmesan, eggs, flour, garlic powder, salt, and black pepper. Mix until well combined.
  • Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  • Cook fritters for 3–4 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate.
  • In a small bowl, mix Greek yogurt, minced garlic, lemon juice, salt, and chopped dill. Taste and adjust seasoning as needed.
  • Serve the warm fritters immediately with the garlic dip on the side.

Notes

To keep fritters crispy, reheat leftovers in a toaster oven or air fryer. Avoid microwaving. Swap flour for almond flour to make them gluten-free. Try zucchini or carrots instead of cabbage for variation. The dip keeps in the fridge for up to 5 days.
