For the Chicken

  • 2 pounds boneless skinless chicken thighs Ensure they are fresh for best results.
  • 2 tablespoons avocado oil For cooking.
  • 1 teaspoon kosher salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground recommended.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard
  • 1 cup BBQ sauce Use a quality brand or homemade.

For the Bowl

  • 2-3 cups cooked rice Any type of rice; adjust for preference.
  • 1 1/2 cups sweet corn Can use cooked from frozen or off the cob.
  • to taste shredded cabbage or coleslaw mix
  • 1 avocado, diced or sliced
  • to taste pickled red onions or thinly sliced raw onions
  • to taste Dairy Free Cilantro Ranch or another sauce of choice Use a store-bought or homemade version.
  • to taste chopped cilantro For garnish.
  • 4 lime wedges For serving.

Instructions
 

Preparation of Chicken

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard. Whisk until smooth.
  • Add the boneless chicken thighs to the bowl, ensuring they are well coated with the mixture.
  • Lay the chicken thighs in a baking dish and pour the BBQ sauce over the top, covering each piece generously.
  • Bake in the preheated oven for about 25-30 minutes, or until the chicken is golden and cooked through (165°F or 75°C).

Assembly of Bowls

  • Once the chicken is out of the oven, let it rest.
  • Start with a base of cooked rice in each bowl.
  • Layer on sweet corn and shredded cabbage or coleslaw mix.
  • Slice the BBQ chicken thighs and arrange on top of the rice.
  • Add diced avocado, pickled red onions, and drizzle with Cilantro Ranch.
  • Sprinkle with chopped cilantro and serve with lime wedges.

Notes

For a cozy meal, serve with a refreshing drink or salad. Can be garnished with cheese for special occasions. Leftovers can be stored in the refrigerator for up to three days.
