  • 1 cup Heavy cream For a lighter version, use half-and-half or evaporated milk.
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Cooked bacon, crumbled
  • Salt and pepper to taste
  • Chives for garnish Adds a fresh note to the dish.

Preparation

  • In a large pot, cook the potatoes, onion, and celery in the chicken broth until the potatoes are tender.
  • Use a potato masher or blender to blend the soup to your desired consistency.
  • Stir in the heavy cream and cheddar cheese until melted.
  • Add crumbled bacon and season with salt and pepper.
  • Serve hot, garnished with chives.

Notes

For a variation, add diced jalapeños for a spicy kick or consider using sweet potatoes for a hint of sweetness. Leftovers can be stored in an airtight container in the fridge and reheated on the stovetop.
