  • 1 cup honey Use any honey you have on hand.
  • 1 cup sugar Granulated sugar is recommended.
  • 1/2 cup unsalted butter, softened Should be softened but not necessarily room temperature.
  • 3 large eggs Can use eggs straight from the fridge.
  • 2 cups all-purpose flour No need to sift.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk Can substitute with non-dairy alternatives.
  • 1 teaspoon vanilla extract Real vanilla preferred for better flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large bowl, cream together honey, sugar, and butter until smooth.
  • Beat in the eggs one at a time until fully incorporated.
  • In another bowl, combine flour, baking powder, and salt. Gradually add to the honey mixture, alternating with milk. Stir in vanilla.
  • Pour batter into the prepared pan and smooth the top.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow cake to cool for 15 to 20 minutes in the pan, then move to a rack to finish cooling.

Serving

  • Serve the cake family-style on a platter, optionally with whipped cream, yogurt, or ice cream.

Notes

Store at room temperature for up to 2 days, or refrigerate for 4-5 days. Freezes well for up to 3 months.
