  • 12 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 14 oz kielbasa sausage, sliced
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • to taste Salt and pepper
  • 1/2 tsp smoked paprika (optional)
  • for garnish Fresh parsley

  • to taste bell peppers
  • to taste red pepper flakes (optional)

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the sliced kielbasa and cook for 4–5 minutes until browned.
  • Next, add the minced garlic and chopped onion. Sauté for 2 minutes until fragrant and translucent.

Cooking

  • Pour in the chicken broth and heavy cream, and bring the mixture to a light simmer, allowing the flavors to blend beautifully.
  • Add the pasta to the pot. Stir well, cover, and simmer for 10–12 minutes, stirring occasionally until the pasta is al dente.
  • Stir in the grated Parmesan cheese until melted, creating a creamy sauce.
  • Add the shredded cheddar or mozzarella cheese and stir until melted and smooth.
  • Season with salt, pepper, and smoked paprika if you choose.
  • Finish with a sprinkle of fresh parsley and serve hot.

Notes

For extra flavor, serve with garlic bread or a fresh salad. If storing leftovers, allow to cool completely and transfer to an airtight container. It will stay fresh in the fridge for up to three days.
