Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the pumpkin puree, sugars, and softened butter until smooth and creamy.
  • Beat in the egg and add vanilla extract, mixing well.
  • In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  • Fold in the chocolate chips gently.
  • Drop spoonfuls of dough onto baking sheets lined with parchment paper, leaving space between cookies.

Baking

  • Bake in the oven for 12-15 minutes or until the edges are golden brown.
  • Allow cookies to cool on a wire rack before serving.

Notes

Store cookies in an airtight container for up to one week in the fridge, or freeze for up to three months. Reheat in the oven or air fryer for a few minutes before serving.
