  • 4 pieces hard-boiled eggs, chopped
  • 0.5 cup celery, diced
  • 0.25 cup onion, finely diced
  • 0.25 cup sweet pickle relish

  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar

Preparation

  • Start by placing the cubed potatoes in a large pot of salted water. Bring it to a boil and let it cook until the potatoes are fork-tender, around 10-15 minutes. Once done, drain and allow them to cool completely.
  • In a large mixing bowl, combine the cooled potatoes, chopped eggs, diced celery, diced onion, and sweet pickle relish.
  • In a separate small bowl, mix together the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, and pepper until well combined.
  • Drizzle the dressing over the potato mixture and gently fold to incorporate, ensuring all potato pieces are evenly coated. Be delicate to avoid mashing the potatoes.
  • Cover the bowl and refrigerate the potato salad for at least an hour before serving to let the flavors meld together. When ready to serve, sprinkle with paprika for a touch of color and flavor.

Notes

Feel free to adjust ingredient quantities based on personal preference. This salad can be customized with additions like garlic or bacon. Store leftovers in an airtight container in the fridge.
