  • 1/2 cup red onion, chopped Can substitute with green onions for milder flavor.
  • 1/4 cup pickles, diced Use dill pickles for classic flavor.

Preparation

  • Boil the potatoes in salted water until tender. Drain and let cool.
  • Peel and cube the potatoes. In a large bowl, combine mayonnaise and mustard.
  • Add potatoes, celery, red onion, pickles, and hard-boiled eggs to the bowl.
  • Stir gently to combine without breaking the potatoes.
  • Season with salt and pepper.
  • Refrigerate for at least 1 hour before serving.
  • Garnish with fresh parsley before serving.

Notes

This potato salad can taste even better the next day. When storing leftovers, keep in an airtight container in the refrigerator for 3-5 days. Stir gently before serving and add a splash of mayonnaise if needed.
