Ingredients
  

Wet Ingredients

  • 1 cup unsalted butter, softened Should be soft enough to blend easily.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract For added flavor.

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Main Ingredients

  • 3 cups rolled oats
  • 1 cup butterscotch chips Can substitute with chocolate chips if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  • Combine the flour, baking soda, and salt in a separate bowl; gradually add this mixture to the creamed mixture until smooth.
  • Stir in the oats and butterscotch chips until evenly distributed.
  • Drop by large spoonfuls onto ungreased baking sheets.

Baking

  • Bake for 10 to 12 minutes until the edges are golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

These cookies stay fresh for up to a week when stored in an airtight container. You can refrigerate or freeze them as well for longer storage.
