Ingredients
  

Wet Ingredients

  • 1 cup oat flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg

Dry Ingredients

  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the melted coconut oil, brown sugar, and granulated sugar. Stir well until everything is blended.
  • Add the vanilla extract and the egg into the bowl. Mix until smooth.
  • In another bowl, whisk together the oat flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture. Stir until a dough forms.
  • Fold in the chocolate chips.

Baking

  • Scoop tablespoon-sized pieces of dough onto a lined baking sheet, leaving space between each.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer bag for up to three months. Reheat in the oven or air fryer at 350°F for best results.
