  • 1 cup rolled oats
  • 1/2 cup peanut butter Room temperature for easier mixing.
  • 1/3 cup honey
  • 1/2 cup protein powder Use your preferred type.
  • 1/4 cup mini chocolate chips Optional.
  • 1/4 cup chopped nuts Optional.
  • 1 tsp vanilla extract

Preparation

  • In a large bowl, mix together all ingredients until well combined.
  • Keep stirring until the mixture looks even and most of the oats are coated.
  • If it seems too dry, add a teaspoon of water or milk and try again.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Place the balls on a baking sheet lined with parchment paper, spacing them an inch apart.
  • Refrigerate for at least 30 minutes to firm up.

Notes

Store in an airtight container in the refrigerator for up to a week. You can freeze them for up to three months. For a variety, experiment with different nut butters and add-ins like cocoa powder or dried fruits.
