No-Bake Nectarine Bars

Sweet, chewy, and mess-free snack bars made with oats, almonds, nectarines, and honey—no baking required. Healthy, portable, and lunchbox-approved.

Ingredients
  

  • 2 cups rolled oats gluten-free if needed
  • 1 cup almonds chopped
  • ½ cup honey or maple syrup
  • ¼ cup coconut oil melted
  • 2 ripe nectarines diced
  • 1 teaspoon cinnamon
  • pinch salt
  • 1 teaspoon vanilla extract optional

Instructions
 

  • In a large bowl, mix rolled oats, chopped almonds, cinnamon, and salt.
  • In a small saucepan, heat honey and coconut oil over low heat until smooth. Stir in vanilla extract if using.
  • Pour the wet mixture over the dry ingredients and mix well. Fold in diced nectarines.
  • Line an 8x8 inch pan with parchment paper. Press the mixture firmly and evenly into the pan.
  • Refrigerate for at least 2 hours. Once set, slice into bars and serve.

Notes

Store bars in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. Thaw at room temperature before eating. Customize with different nuts, fruits, or use quinoa flakes instead of oats.
