For the Pie Crust

  • 1 tablespoon lemon juice To brighten and enhance the flavors of the apples.
  • 1 tablespoon cornstarch This will help thicken the filling.
  • 1 piece egg, beaten For egg wash to give your pies a beautiful golden finish.

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • In a large bowl, combine 2 cups of flour, 1/4 cup of granulated sugar, and 1/4 teaspoon of salt. Mix well.
  • Cut in 1/2 cup of cold butter until the mixture resembles coarse crumbs.
  • Stir in 1/4 cup of ice water until the dough comes together.
  • Roll the dough out on a lightly floured surface until it's about 1/8 inch thick. Cut out circles that are slightly larger than the muffin tin cups.

Filling and Baking

  • In another bowl, mix together the diced apples, 1 cup of brown sugar, 1 teaspoon of cinnamon, 1 tablespoon of lemon juice, and 1 tablespoon of cornstarch.
  • Fit the dough circles into the muffin tin, pressing them into the bottom and sides of each cup.
  • Fill each cup with the apple mixture, leaving a little space at the top.
  • Optionally, cover each muffin cup with a small circle of dough or a crumble topping made from more flour, butter, and sugar.
  • Brush the tops of each mini pie with the beaten egg to achieve a golden color.
  • Bake for 25-30 minutes until the crust is golden and filling is bubbly.
  • Allow the mini pies to cool for a few minutes before serving.

Notes

These pies are best enjoyed warm. Consider serving with vanilla ice cream, whipped cream, caramel sauce, or fresh fruit for an added delight.
