Moist Applesauce Oatmeal Muffins

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats
  • 3/4 cup light brown sugar
  • 1/4 cup white granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg optional
  • 1/2 teaspoon fine sea salt

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Optional Add-Ins

  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup raisins or dried cranberries optional

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  • In a medium bowl, mix the oats and milk. Let them sit for 10 minutes.
  • In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk the applesauce, melted butter, eggs, and vanilla until smooth.

Mixing

  • Pour the wet mixture into the dry ingredients, add the soaked oats, and stir until just combined.
  • Fold in any optional nuts or dried fruit.

Baking

  • Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  • If desired, sprinkle with additional toppings.
  • Bake for 18 to 22 minutes, until the tops are golden.
  • Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days. For longer storage, freeze individual muffins.
