  • 4 pieces boneless, skinless chicken breasts
  • 1 piece yellow onion, chopped for base flavor
  • 1 piece jalapeño, diced adjust quantity for spice preference
  • 4 cups chicken bone broth
  • 1.5 cups sour cream for creaminess
  • 0.5 cups shredded Monterey Jack cheese or a blend of Monterey Jack and mild cheddar
  • 4 cloves garlic, minced
  • 0.5 tablespoon dried oregano
  • 0.5 teaspoon chili powder
  • 2 cups frozen sweet white corn
  • 0.5 cups fresh cilantro, chopped for garnishing
  • 1 piece lime, juiced
  • 3 tablespoons cornstarch for thickening
  • 3 tablespoons water
  • 1 tablespoon olive oil for cooking

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the chopped onion and diced jalapeño. Cook for about 5 minutes until the onion softens and becomes translucent.
  • Stir in the minced garlic, chili powder, and oregano. Cook for another minute.
  • Pour in the chicken broth and add the chicken breasts. Season with salt and pepper. Bring to a boil, then reduce heat, cover, and let simmer for 10-15 minutes.
  • Transfer the cooked chicken to a plate and shred it with two forks.
  • Add the shredded chicken back to the pot. Stir in the sour cream, shredded cheese, chopped cilantro, corn, and lime juice.
  • Mix cornstarch and water in a small bowl, then pour into the pot while stirring. Let the chili simmer uncovered for another 10 minutes to thicken.
  • Ladle chili into bowls and top with your choice of toppings such as crispy bacon, cotija cheese, tortilla strips, or avocado.

Notes

Store leftovers in an airtight container for 3-4 days. This chili can also be frozen for future meals. Customize it with your favorite toppings or make substitutions like using rotisserie chicken or adding more vegetables.
