  • 4 cups corn (fresh or canned) Fresh sweet corn if in season, otherwise canned is acceptable.
  • 1/2 cup red onion, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled Can substitute with cotija cheese for a sharper flavor.

Dressing Ingredients

  • 1/4 cup mayonnaise Can be substituted with vegan mayonnaise for a vegan version.
  • 2 tablespoons lime juice Add more if you like a zesty flavor.
  • 1 teaspoon chili powder Adjust to taste for spice level.
  • to taste Salt and pepper Season according to preference.

Preparation

  • In a large bowl, combine the corn, red onion, bell pepper, cilantro, and feta cheese. Stir gently to mix everything together evenly.
  • In a separate bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper to create the dressing.

Combining

  • Pour the dressing over the corn mixture and toss gently until everything is well combined.
  • Serve chilled or at room temperature to enjoy the fresh flavors.

Notes

For added flavor, you can include diced jalapeños, or roast sweet corn on the grill for a smoky taste. Store leftovers in an airtight container in the refrigerator for up to three days.
