Ingredients
  

Pasta and Vegetables

  • 1 lb Rotini Pasta (Cooked al dente)
  • 2 cups Persian Cucumbers (Sliced into rounds)
  • 2 cups Cherry Tomatoes (Halved)
  • 1/2 medium Red Onion (Thinly sliced)
  • 1 cup Kalamata Olives (Pitted and halved)
  • 6 oz Feta Cheese (Crumbled)
  • 1/2 cup Fresh Parsley (Finely chopped)

Vinaigrette

  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 1 tsp Dried Oregano

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a boil and add the rotini pasta. Cook it according to the package instructions until al dente.
  • Once cooked, drain the pasta and rinse it under cold water to stop the cooking process.

Preparing the Vegetables

  • While the pasta cools, slice the cucumbers, halve the tomatoes, and thinly slice the red onion.

Making the Vinaigrette

  • In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, and dried oregano.

Combining Ingredients

  • In a large mixing bowl, combine the cooked pasta, sliced cucumbers, cherry tomatoes, red onion, kalamata olives, crumbled feta, and chopped parsley.
  • Pour the vinaigrette over the top and gently toss everything together until well combined.

Notes

Best enjoyed fresh or chilled. Can be stored in an airtight container in the fridge for up to three days. The flavors meld beautifully overnight.
