For the Meatloaf Layer

  • 1 lb ground beef (85/15 preferred) Use lean ground beef for best results.
  • 1/2 cup plain breadcrumbs Helps bind the meatloaf.
  • 1/3 cup milk Adds moisture and richness.
  • 1 unit egg Acts as a binder.
  • 1/4 cup ketchup For flavor and moisture.
  • 1 tsp garlic powder Adds garlic flavor.
  • 1 tsp onion powder Enhances taste.
  • 1/2 tsp salt To taste.
  • 1/2 tsp black pepper To taste.

Mashed Potato Layer

  • 3 cups mashed potatoes (prepared or leftover) Ensure they are creamy.
  • 1/4 cup sour cream Adds creaminess and tang.
  • 2 tbsp butter For richness.
  • Salt & pepper, to taste Adjust according to preference.

Topping

  • 1 1/2 cups shredded cheddar cheese For a melty topping.
  • Fresh parsley (optional, for garnish) Adds color and freshness.

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper.

Mixing the Meatloaf

  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.

Baking the Meatloaf

  • Spread the meat mixture evenly in the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes.

Preparing the Mashed Potatoes

  • Warm the mashed potatoes in a pot. Stir in sour cream and butter. Season with salt and pepper to taste.

Layering the Dish

  • Carefully spread the fluffy mashed potatoes over the baked meatloaf layer.

Adding Cheese and Final Bake

  • Sprinkle shredded cheddar evenly over the top. Bake for an additional 10–15 minutes until the cheese is melted and bubbly.

Cooling and Serving

  • Let the dish cool for 5–10 minutes. Garnish with chopped parsley if desired. Slice and enjoy!

Notes

Leftovers should be stored in an airtight container in the fridge for up to three days. For longer storage, freeze portions tightly wrapped.
