Marry Me Chicken Orzo

Main Ingredients

  • 1 lb Boneless chicken breasts or thighs Thighs are juicier.
  • 2 tbsp Olive oil or butter Use what’s in your pantry.
  • 4 cloves Garlic Adjust amount to taste.
  • 1/2 cup Sun-dried tomatoes Jarred in oil is best.
  • 2 cups Chicken broth Can use stock or bouillon cubes.
  • 1 cup Heavy cream Can substitute half & half.
  • 1 cup Orzo Cooks like pasta.
  • 1/2 cup Parmesan cheese Freshly grated preferred.
  • 1 tbsp Italian seasoning Or mix of oregano and basil.
  • to taste none Salt and black pepper To season the dish.

Instructions
 

Preparation

  • Heat olive oil or butter in a large skillet or Dutch oven.
  • Brown the chicken on both sides until golden.
  • Remove the chicken and sauté the garlic until it's barely golden.
  • Add sun-dried tomatoes and stir to combine.
  • Pour in chicken broth and heavy cream, then add the orzo.
  • Return the chicken to the pan, sprinkle in Italian seasoning, cover, and simmer for 12-14 minutes until orzo is soft.
  • Sprinkle with parmesan, stir, and let it rest for a minute before serving.

Notes

For added greens, stir in spinach or kale at the end. Leftovers can be reheated with a splash of chicken broth to keep it creamy.
