Ingredients
  

Brine Ingredients

  • 4 cups water
  • 3/4 cup Kosher salt
  • 1 stick cinnamon stick Consider adding more for extra spice.
  • 2 quarts apple juice White grape juice can be used as a substitute.
  • 1/4 cup apple cider vinegar
  • 2 teaspoons maple extract
  • 1 teaspoon allspice

Turkey Ingredients

  • 2 tablespoons butter Fresh butter enhances the flavor.
  • 2 tablespoons real maple syrup Reserved for glazing the turkey.

Instructions
 

Brining

  • In a large pot, combine the Kosher salt and the cinnamon stick with 4 cups of water. Bring this mixture to a gentle boil, stirring until the salt fully dissolves.
  • Once it boils, let it cook for about 5 minutes before setting it aside to cool. To speed up the process, you can toss in a few ice cubes.
  • Mix in the apple juice, apple cider vinegar, maple extract, and allspice until everything is well combined.
  • Take your fresh or thawed turkey and place it inside a large (16-quart or larger) stock pot. If desired, include the drumsticks for extra flavor.
  • Pour the brine mixture over the turkey, ensuring that it is entirely submerged.
  • Cover the pot securely and place it in the refrigerator to brine for at least 8 hours, though overnight is ideal for deeper flavor.

Cooking

  • After brining, gently remove the turkey from the saltwater mixture. Rinse it with cold water and pat it dry. Place it in a baking dish, allowing it to come to room temperature for about 45 minutes.
  • Decide how to cook it: smoke it or preheat the oven to 350 degrees for roasting.
  • In a small saucepan, melt the butter together with real maple syrup. Coat the turkey generously with this blend, reserving some for later.
  • Add about 1/2 inch of water to the bottom of your cooking pan. Place the turkey in the preheated oven and bake it for approximately 90 minutes.
  • At the halfway point, brush on more of the glaze. Check for golden edges as a sign it's nearing perfection.
  • Use a meat thermometer to ensure the turkey has reached an internal temperature of 165 degrees.
  • Serve the turkey with all the delicious fixings and enjoy the warmth of shared memories.

Notes

For leftovers, allow the turkey to cool before wrapping tightly in plastic wrap or storing in an airtight container. Reheat gently to preserve moisture. Variations may include adding garlic or herbs to the brine for extra flavor.
