  • 6 pieces English muffins, split
  • 12 large eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 pound cooked sausage or bacon
  • 2 cups fresh spinach or other greens

  • to taste Black pepper Adds warmth

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Whisk the eggs in a bowl until they are smooth and glossy. Season them with salt and pepper.
  • Cook the eggs in a non-stick skillet or bake them in a greased muffin tin until set.
  • Split the English muffins in half and have them ready.
  • Layer each muffin half with a generous pile of cooked eggs, followed by a sprinkle of cheese and your choice of cooked sausage or bacon.
  • Add a layer of spinach or other greens to each sandwich.
  • Wrap each sandwich individually in plastic wrap.
  • Place the wrapped sandwiches in a freezer bag and freeze.

Serving

  • When you’re ready to eat, unwrap the sandwich and microwave for about 1-2 minutes or until heated through.

Notes

These sandwiches can stay fresh in the freezer for up to three months. Allow to cool completely before freezing to preserve texture.
