  • 2 cups macaroni Cook according to package instructions.
  • 1/2 cup roasted red peppers, diced
  • 1/2 cup peppadews, diced
  • 1/2 cup pepperoncini, sliced

Dressing

  • 1/2 cup mayonnaise Use real mayonnaise for best flavor.
  • 2 tablespoons mustard
  • 1 clove garlic, minced Fresh garlic enhances the flavor.
  • Salt and pepper To taste.

Garnish

  • Chives For garnish, optional.

Preparation

  • Cook the macaroni according to package instructions; drain and let cool.
  • In a large bowl, combine the roasted red peppers, peppadews, and pepperoncini.
  • In another bowl, mix the mayonnaise, mustard, minced garlic, salt, and pepper until smooth.
  • Combine the cooled macaroni with the mixed vegetables and dressing; stir until well combined.
  • Adjust seasoning as needed and chill before serving.
  • Garnish with chopped chives before serving.

Notes

Store in an airtight container in the refrigerator for up to three to four days. Flavors deepen over time. Can be made a day in advance.
