Lime Jello Salad with Cottage Cheese

Retro, creamy, and unexpectedly delicious, this lime Jello salad blends cottage cheese, pineapple, and marshmallows into a jiggly masterpiece. Perfect for potlucks, holidays, or a nostalgic treat.

Ingredients
  

  • 1 box lime Jello 3 oz
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup cottage cheese full-fat for creaminess
  • 1 cup crushed pineapple drained
  • 1/2 cup mini marshmallows
  • 1/2 cup whipped topping Cool Whip or homemade

Instructions
 

  • In a large bowl, dissolve lime Jello powder in boiling water. Stir until completely dissolved.
  • Stir in the cold water. Refrigerate for about 45 minutes until slightly thickened but not fully set.
  • Gently fold in cottage cheese, drained pineapple, mini marshmallows, and whipped topping. Mix until just combined.
  • Transfer the mixture into a serving dish or mold and refrigerate for at least 4 hours or until fully set.
  • Serve chilled. Optional: garnish with additional whipped topping or maraschino cherries.

Notes

Store in an airtight container in the fridge for up to 3 days. Do not freeze. To switch it up, try different Jello flavors or swap cottage cheese for Greek yogurt. Be sure to drain pineapple well and chill Jello until syrupy before adding mix-ins.
