Ingredients
  

  • 1.5 lbs bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 tablespoon fresh rosemary finely chopped
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pat chicken thighs dry with paper towels. In a small bowl, whisk together olive oil, rosemary, lemon zest and juice, garlic, salt, and pepper.
  • Place the chicken in a single layer in a baking dish and pour the rosemary-lemon mixture over it. Add chicken broth to the bottom of the dish.
  • Bake for 35–40 minutes or until the chicken reaches 165°F (74°C). Let rest for 5 minutes before serving.

Notes

This dish is low effort but full of bright, fresh flavor. Use the oven or air fryer to reheat leftovers and keep that crispy skin. Serve with greens, grains, or garlic bread for a well-rounded plate.
